Most of you already know my history. I have Parkinson's Disease. This has changed my life to a large extent (at least I have let it change my life). To all my friends and family, bare with me and I hope to get my head on straight! I don't intend to turn this blog into a whinning-fest but a winning-fest. My main reason for creating this blog is to educate and entertain you! I plan to post links, humour, art and music that I find interesting, educational and (I hope) affects you on an emotional level. Son in Law Eggs

There are a few theories as to why these delectable deep fried eggs drizzled with a sticky Thai sauce are indeed called ‘Son in Law Eggs.’ Some suggest a son in law once cooked them to impress his mother in law, a more scandalous speculation (and the one I like more) is that if a mother in law cooks this dish for her son in law it signifies his dubious behaviour is being watched carefully and if he doesn’t smarten up, his “egg shaped bits” might end up on the plate next!

Ingredients:

6 large free range eggs

2 tsp tamarind puree

¼ cup water

1 tbs fish sauce

1 tbs palm sugar

1 tbs lime juice

½ tsp minced garlic

2 birds eye chillis, sliced

salt

2 golden shallots, sliced thinly and deep fried

Corriander, to serve

Vegetable or peanut oil, for frying

Method:

1.Fill a medium sized pot with water and bring to the boil
2.Using the sharp tip of a knife, poke a tiny hole in the bottom of each egg (this allows the air to escape from the egg to create a perfect egg shape)
3.Boil eggs in water for about 4 – 5 minutes for soft boiled eggs, longer if you prefer harder yolks
4.Meanwhile to make the dressing, combine tamarind puree, water, fish sauce, palm sugar, lime juice, garlic, chilli and sliced in a wok or small pot and cook over medium heat until syrupy, add more water or any of the other ingredients until a nice balance between sweet, sour and salty is achieved. Remove from heat.
5.Remove eggs from boiling water and plunge into iced water (this stops the cooking process and allows you to peel the eggs without burning your fingers!) then carefully peel the eggs
6.Heat vegetable oil to about 170 degrees in a medium sized frying pan so that you are able to shallow fry the eggs
7.Add eggs, a few at a time, and fry until golden and blistered all over. Remove with a slotted spoon and place on paper towel
8.Using the same vegetable oil, add sliced golden shallots and deep fry until crispy. Remove with a slotted spoon and place on paper towel
9.Pour dressing over eggs, garnish with extra chilli, coriander and fried shallots. Serve immediately

new recipe for "healthyfied" Gravy

2 cups Chicken broth
1 small onion coursly chopped
1 medium carrot ditto
1 celery stalk ditto ditto again!
1/2 cup cold water why not!? chop it too (how hard is your water?)
1 tsp soy sauce
1/4 cup flour (or fleaur if your making this in Quebec)

dash Poultry seasoning What the @#$%&#! is poultry seasoning? (Optional)

directions
using a large saucepan, heat first 4 ingredients to boiling. using a strainer (no!, not a stranger!) pour broth and vegggies through using a wooden spoon to extract juices from veggies. Return broth to saucepan. discard veggie pulp

in a small bowl stir water, soy, flour and seasoning until smmoooothhh. Add flour mixture into broth gradually and continue stirring

Heat to boiling and cook 1 minute until thick and bubbley.
